1 kg (2.2 lbs) fresh strawberries, hulled and halved
800 g (4 cups) granulated sugar
2 tablespoons lemon juice
Instructions:
Prepare the Strawberries: Wash, hull, and halve the strawberries. Place them in a large bowl and mash lightly with a fork or potato masher, depending on your preferred jam texture.
Combine Ingredients: In a large saucepan, combine the mashed strawberries, sugar, and lemon juice. Stir well.
Cook the Jam: Place the saucepan over medium heat. Stir constantly until the sugar dissolves. Increase the heat and bring the mixture to a boil. Continue to cook, stirring frequently, until the jam thickens (about 20–30 minutes). Skim off any foam that forms on the surface.
Test for Doneness: To check if the jam is ready, place a small spoonful on a cold plate. Let it sit for a minute, then run your finger through it. If it wrinkles and doesn’t run back together, it’s done.
Jar the Jam: Pour the hot jam into sterilized jars, leaving a little space at the top. Seal with lids and let cool to room temperature. Store in the refrigerator for up to 3 weeks, or process in a water bath for longer shelf life.
Tips:
For a smoother jam, blend the strawberries before cooking.
You can adjust the sugar to taste, but sugar helps preserve the jam.
